Vintage: An unusually wet year with a total rainfall of 54” recorded. Timing of precipitation was advantageous offering a consistent push from bud break through fruit set. We achieved a 27 ton yield, the largest harvest we’ve had since our replanting that began 15 years ago. Average high was 72.3 degrees, average low was 55.6 degrees. Cooler nights helped us retain acidity and give us vibrancy in our 2014 wines.

Vinification: Harvested early while sugars were low and acid high, fruit was chilled to 40degrees and then processed. 100% whole cluster into the press. Dry ice was added to press to remove oxygen and cool juice. Fruit was slowly pressed to 10PSI and all juice was fermented together. 100% MLF. Wine was tirage bottled and processed in the Traditional Methode. 30 months aging in tirage and finished as a Brut Nature.

Estate Grown

Rare—without question. This handcrafted wine carries the essence of a single mountain that pushes like a miracle from the center of the Pacific Ocean. Its layers of flavor, its uniqueness and its complexities are designed by Haleakala.
Our first vintage of estate sparkling comes to us from the 2014 Chenin Blanc harvest. Less than 85 cases of this wine was produced in the Traditional Methode, gently aged in tirage for over 2 years and finished delicately. Take pleasure in this wine, it is not produced every year and the next release won’t be until 2020.

I want to start off by saying I'm under a lot of pressure here, being the first estate sparkler and all. I've spent a couple years locked up in tirage and I have to admit, I'm a little yeasty because of it. Just sitting there aging for 30 long months really helped me figure out who I was and who I wanted to be when I grew up. And now I'm out, I'm all dressed up proper like on the outside, but on the inside you'll find I'm a little whacky, mature and well put together yes of course... but sorta whacky.
